ABSTRACT

Objective@#To investigate the intake of liquid dairy products and identify its influencing factors among the fourth grade students in Nanjing City. @*Methods@#The fourth grade students were selected as the study subjects in Nanjing City using a multi-stage random cluster sampling method in September 2020. Their general information, frequency of liquid dairy product intake one week prior to survey and mean intake amount per time were collected. According to the 2016 Dietary Guidelines for Chinese Residents, weekly intake of liquid dairy products of 2 100 g and greater was defined eligible. Factors affecting the frequency and amount of liquid dairy product intake were identified using multivariable logistic regression analysis.@*Results@#A total of 2 268 questionnaires were allocated and 2 216 valid questionnaires were recovered, with an effective recovery rate of 97.71%. The respondents included 1 199 boys ( 54.11% ) and 1 017 girls ( 45.89% ). The frequency of liquid dairy product intake was (6.41±4.86) times per week, and the median intake amount was 1 250.00 g per week (interquartile range, 1 750.00 g per week). There were 607 students ( 27.39% ) consuming liquid dairy products of 2 100 g and greater a week, and 1 016 students ( 45.85% ) consumed liquid dairy products for 7 times and more a week. Multivariable logistic regression analysis showed that living in urban areas ( OR=1.204, 95%CI: 1.005-1.443 ), knowing nutrition labels ( OR=1.221, 95%CI: 1.021-1.460 ), periodical measurement of body weight (OR=1.486, 95%CI: 1.098-2.011) and restricted intake of sugar-containing drinks ( OR=1.264, 95%CI: 1.005-1.590 ) facilitated the intake of liquid dairy products for 7 times and more a week, and students with periodical measurement of body weight were more likely to consume liquid dairy products for 2 100 g and greater a week ( OR=1.821, 95%CI: 1.240-2.676 ).@*Conclusions@#Inadequate intake of liquid dairy products is found among the fourth grade students in Nanjing City. Residence, awareness of nutrition labels, periodical measurement of body weight, and parental restriction of sugar-containing drink intake affect the intake of liquid dairy products.

ABSTRACT

PURPOSE: This study examined the effects of a mobile app-based program to reduce the dietary sugar intake according to the stages of the behavioral change in dietary sugar reduction in female college students. METHODS: The program used in this study can monitor the dietary sugar intake after recording the dietary intake and provide education message for the reduction of dietary sugar intake. In an eight-week pre-post intervention study, 68 female college students were instructed to record all the food they consumed daily and received weekly education information. At pre-post intervention, the subjects were asked to answer the questionnaire about sugar-related nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. For statistical analysis, ANOVA and a paired t-test were used for comparative analysis according Precontemplation (PC), Contemplation ·Preparation (C ·P), and A ·M (Action ·Maintenance) stage. RESULTS: Significant differences were observed in the frequency of snacking, experience of nutrition education, and preference for sweetness according to the stages of behavior change in dietary sugar reduction. After finishing an intervention, the sugar-related nutrition knowledge score was increased significantly in the stages of Precontemplation (PC) and Contemplation ·Preparation (C ·P). The score of the sugar intake behavior increased significantly in all stages. The intake frequency of chocolate, muffins or cakes, and drinking yogurt decreased significantly in the PC stage and the intake frequency of biscuits, carbonated beverages, and fruit juice decreased significantly in the C ·P stage. Subjects in the PC and C ·P stages had an undesirable propensity in nutrition knowledge, sugar-intake behavior, and sugar-intake frequency compared to the A ·M stage, but this intervention improved significantly their nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. CONCLUSION: This program can be an effective educational tool in the stages of PC and C ·P, and is expected to further increase the usability and sustainability of mobile application if supplemented appropriately to a health platform program.

OBJECTIVES: This study examined the effects of nutrition education on the nutritional status, including eating habits and quality of life in gastric cancer patients undergoing a gastrectomy. METHODS: Thirty one out-gastric resection patients at C University Hospital in Gwangju, Korea were enrolled in this study. The patients received an individualized nutritional counseling session, and the effects were assessed before and after a 3-month nutrition education intervention. Nutrition education for gastric cancer outpatients included the dietary guidelines (e.g., food intake), the level of nutrient intake, and nutrition support. RESULTS: The patients had significantly improved serum albumin and hematocrit levels after nutrition education. Of the dietary habits, the meal time and amount of food compared to the first education were increased significantly. Of the changes in the food intake frequency, fish and meat, and vegetables and fruits intake were increased, but not at a statistically significant level. The score of eating habits related to the gastrectomy was improved significantly after nutrition education from 31.7 to 34.5. The composite scores for the quality of life were also improved significantly after the nutrition education program. CONCLUSIONS: The nutrition education for gastric cancer outpatients may be crucial and efficient for improving their lifestyle.

ABSTRACT

Objectives: This study aimed at identifying the differences in the vegetable intake frequency among rural, suburban, and urban residents. It also intended to estimate the effects of vegetable cultivation, receiving vegetables, and purchasing vegetables at farmers’ markets on the differences in vegetable intake frequency. Based on the results, to promote vegetable intake, we discuss the value of supporting vegetable cultivation in the rural areas.Materials and Methods: We conducted a cross-sectional study targeting residents aged between 20 and 74, living in three parts of a city within the Gunma prefecture in Japan. The three locations were selected to represent the rural, suburban, and urban areas. We mailed two sets of anonymous self-administered questionnaires to all households in the three areas (a total of 2,260 households, comprising about 1,000 people aged between 20 and 74 in each area). The survey requested information on the vegetable intake frequency, vegetable cultivation, frequency of receiving vegetables, frequency of vegetable purchase at farmers’ markets, the subjective difficulty in food-store access, economic circumstances, health attitudes, and demographic characteristics. We used the analysis of covariance (ANCOVA) to examine the data obtained.Results: We received 873 responses (from 586 households), of which 90 were irrelevant, thus leaving a sample of 783 residents (257 rural, 259 suburban, 267 urban) available for statistical analysis. The results revealed that the rural residents had significantly greater vegetable intake frequency than the urban and suburban residents did. These regional differences became smaller after the adjustment of the following variables: vegetable cultivation, receiving vegetables, and vegetable purchase at farmers’ markets. No significant difference was observed in the vegetable intake frequency between the rural and urban respondents after this adjustment was made.Conclusions: Vegetable intake frequency was higher in the rural area than in the suburban and urban areas. Vegetable cultivation, receiving vegetables, and vegetable purchase at farmers’ markets were strongly linked to these regional differences.

ABSTRACT

<p><b>Introduction: </b>Many details about adolescent women's lifestyles and masked obesity have not been clarified in prior research. Thus, we conducted an exploratory survey on the lifestyle and masked obesity in female college students.</p><p><b>Methods: </b>From September to October in 2012, we investigated 85 female students aged 18-23 years in two colleges in the Kanto area and cross-sectionally investigated the differences in lifestyles between subjects with masked obesity [Body Mass Index (BMI) <25 kg/m<sup>2</sup> and Body Fat Percentage ≥30%] and those with standard proportions (18.5≤BMI<25 kg/m<sup>2</sup> and Body Fat Percentage=20-25%). Their body composition was measured using InBody430, and their lifestyles were investigated using a self-administered questionnaire.</p><p><b>Results: </b>Of them, there were 6 subjects (7.1%) with standard proportions and 25 subjects (29.4%) with masked obesity; 44.6% of the 56 subjects with standard weights had masked obesity. Differences were observed in their food intake frequency; the subjects with masked obesity consumed a smaller daily intake of green and yellow vegetables (<i>p</i><.001) and light-colored vegetables (<i>p</i>=.008), and more frequently consumed mayonnaise (<i>p</i>=.003) and fried foods (<i>p</i>=.018) than those with standard proportions.</p><p><b>Conclusion: </b>Masked obesity may increase the probability of having unhealthy dietary habits. It may be necessary for females with standard weights to receive dietary advice, and to have their body fat percentage regularly measured.</p>

ABSTRACT

OBJECTIVES: Vegetables are the most left over side dishes in school lunch programs. This study intended to analyze the differences in preference for vegetables among the students of different age groups in order to determine potential ways of increasing vegetable consumption in this study group. METHODS: A total of 308 primary to university students in Gyeongbuk area were recruited and a questionnaire-based survey was conducted. The preference score (7-Likert scale: very much dislike (1)~so-so (4)~like very much (7)) and intake frequency (5-Likert scale) of 48 kinds of vegetables in 4 vegetable groups, such as vegetable (fruit-, root-, leaf-, and stalk- vegetable), seaweeds, mushrooms, and kimchi were investigated, and data were analyzed by SPSS WIN (ver 12.0). RESULTS: The preference scores of vegetables except for seaweeds were significantly different among school groups, university was the highest, followed by high school. Primary and middle school students showed the lowest preference score, especially for leaf- and stalk- vegetables. The preference score for seaweeds was the highest of 5.28, followed by kimchi of 4.99. With regard to kimchis, the preference score was the highest in university', followed by high school, middle school, and primary school' was the lowest. The number of vegetables with < 4.0 preference score was the highest in primary school of 16, 15 in middle school, 11 in high school, and 7, the lowest in university. The vegetable with preference score of < 4.0 in all 4 school groups were mallow, chard, bud, radish leaf, mugwort, butterbur and sweet potato stalk. With regard to the intake frequency of vegetables, kimchis, an indispensable part of the Korean diet, was the highest of 2 times/day, followed by cooked vegetables of 1.5 times/day. The correlation coefficients between preference scores and intake frequencies were statistically significant in all groups of vegetables. As for the coefficient of variation (CV) of preference score, primary school' was the highest and university' was the lowest. The number of vegetables with high CV and high inexperience were highest in primary school students. CONCLUSIONS: Providing more opportunities for consuming a variety of vegetables, such as leaf- and stalk- vegetable, it may be possible to increase vegetable consumption, especially for the primary school students.

ABSTRACT

OBJECTIVES: The purpose of this study was to provide the preliminary data for dietary education to increase students' vegetables intake. METHODS: The attitude of vegetables consumption (5-Likert scale), preference score (7-Likert scale) and eating frequency (5-Likert scale) of 9 fragrance vegetables were investigated by survey questionnaire. A total of 370 students enrolled in primary, middle, high schools, and university participated in the study and data were analyzed by the SPSS WIN (ver 12.0). RESULTS: About 40% of those surveyed answered that they do not eat some kinds of foods and 16% of students do not eat vegetables, the most unfavorable foods. The students in all groups (primary 2nd and 5th, middle and high school, university students) answered that they liked vegetables with the highest score in university students, and they did not often eat fragrance vegetables. Lower age student group, especially primary school 2nd showed more positive attitudes of eating challenge toward no experience, bad taste, and dislike but nutritious vegetable foods. The most important factor of vegetable preference was taste, the biggest reason of both like and dislike. Only 4 students designated nutrition as for vegetable dislike reason, means that all students knew about the nutritional importance of vegetables. It was shown that the color and flavor of the vegetables act as dislikable reason rather than likable reason. The significant correlations between preference score and intake frequency of fragrance vegetables were confirmed, and the younger the students the greater the correlation coefficient. CONCLUSIONS: Thus providing more chance to experience vegetables, such as fragrance vegetables and education about the importance of balanced diet will be an effective way of increasing vegetables intake, and the younger the students the greater the education effect.

ABSTRACT

This study was conducted to examine the interrelations among snack preference, purchasing behavior and intake of fifth and sixth grade students in elementary schools in Gyeongnam province. Frequency of snack intake was the highest in those who reported 'once a day' (45.6%) snack habit. Longer-time television viewers also showed higher frequency of snack intake than shorter-time viewers. Thirty-three percent of students purchased snacks by themselves and the frequency of snack purchasing had a significant positive relationship with TV watching time (p 2hr) compared to shorter-time TV viewers and this difference was statistically significant (p < 0.001). The snack preference score was correlated positively (r = 0.454) with the intake frequency for snack and its explanation power (R2) was 20.5%. With regard to snack purchase behaviors, the scores of 'checking the expiration date' and 'comparing the price with similar products' were high (in what group?). Female students (p < 0.001) and shorter-time TV viewers (< 2hr) (p < 0.01) had a more reasonable purchasing behavior. The total score of preference was significantly higher (p < 0.05) in shorter-timeTV viewers (< 2hr). In the correlation between snack purchasing behaviors and intake frequency, attractiveness (r = 0.208, p < 0.001) and preference (r = 0.330, p < 0.001) showed significant positive correlations. The result of regression analysis, preference only was selected (R2= 0.108).

ABSTRACT

This study investigated the preference and intake frequency of a list of 15 commonly available high sodium Malaysian foods/dishes, discretionary salt use, and their possible association with demographics, blood pressures and anthropometric measurements among 300 Malaysian university students (114 males, 186 females; 259 ethnic Chinese, 41 Indians; 220 lean, 80 overweight). French fries and instant soup noodle were found to be the most preferred and most frequently consumed salty food, respectively, while salted fish was least preferred and least frequently consumed. Males had a significantly higher intake frequency of at least 6 of the salty foods, but the preference of most salty foods was not significantly different between genders. Ethnic Chinese significantly preferred more and took more frequently traditional and conventional Malaysian foods like asam laksa (a Malaysian salty-sour-spicy noodle in fish stock), salted biscuits and salted vegetable, while Indians have more affinity and frequency towards eating salty Western foods. Body Mass Index was significantly negatively correlated with the intake frequency of canned/packet soup and salted fish while waist circumference was significantly positively correlated with the preference of instant noodle. Also, an increased preference of potato chips and intake frequency of salted biscuits seemed to lead to a decreased WHR. Other than these, all the other overweight/obesity indicators did not seem to fully correlate with the salty food preference and intake frequency. Nevertheless, the preference and intake frequency of asam laksa seemed to be significant negative predictors for blood pressures. Finally, increased preference and intake frequency of high sodium shrimp paste (belacan)-based foods like asam laksa and belacan fried rice seemed to discourage discretionary salt use. In conclusion, the preference and intake frequency of the high sodium belacan-based dish asam laksa seems to be a good predictor for ethnic difference, discretionary salt use and blood pressures.

ABSTRACT

This study was conducted to provide basic information on toothbrushing habits, snack intake frequency, and current dental caries in elementary school students. A total of 188 students (105 boys and 83 girls) in Changwon city participated in this study. Dental examination was conducted by two dental hygienists in July, 2010. The results were as follows. Exactly 86.2% of students were shown to have dental caries, which includes a sealant and removed teeth due to decay. The average number of teeth with dental caries per student was 3.8. Exactly 60.6% of students were shown to maintain correct toothbrushing habits to prevent dental caries, but only 12.8% brushed their teeth immediately after a meal or snack. Exactly 82.4% percent of participants received toothbrushing education, 47.1% of them received it from an expert, 43.9% received from their parents, and 28.2% used tooth paste with fluorine. Regarding snack intake frequency, ice cream was the most consumed cariogenic food and white milk was the most consumed protective food. The >=7 teeth with dental caries group consumed higher frequency of carbonated beverages intake than the 'no dental caries' group (P<0.05), and the '5~6 teeth with dental caries' group consumed higher frequency of chocolate intake than 'no dental caries' group (P<0.05).

ABSTRACT

This study was conducted to provide basic information snack intake frequency, eating patterns and current dental caries in high school students. A total of 626 students (333 males, 293 females) in Gimhae city participated in this study. The survey conducted by using a self-administered questionnaire in January, 2008. Dental caries-related information was obtained during the students' physical examination at the designated clinical hospital in 2007. The results were as follows. Sixty three point nine percent of the students were shown to have dental caries, which includes a sealant. The average number of dental caries was 3.1, which was greater in female than in male students (p < 0.001). Eighty six percent of the students were shown to maintain correct toothbrushing habits to prevent dental caries. Twenty percent of the participants brushed there teeth 'instantly' a meal or snack, and 27.3% of the participants brushed there teeth, gum and tongue, and 58.9% of the participants received toothbrushing education. In snack intake frequency, participants with no dental caries had preference to white milk whereas those with dental caries had preference to snacks such as chewing gums and carbonated beverages. Female students were shown to have more dental caries maybe because of their higher snack intake frequency in chocolate, cookies and chips, yoghurt and ice-cream. Dental caries did not affect eating behaviors. This study suggests that more education for correct toothbrushing and cariogenic and detergent foods are needed for better dental hygiene.

ABSTRACT

The purpose of this study was to investigate the relation of the fast food and beverage intake on sociality and anger expression of adolescents. Questionnaires were distributed to the adolescents of 599 middle and high school students in Busan. According to the results, the preference-intake frequency analysis (PEA) on fast food grid, high preference and high intake frequency were 'dukbokki', 'chicken' and 'mandu' and low preference and high intake frequency were 'ramyon', 'gimbab. PEA on beverage grid, high preference and high intake frequency were 'milk dairy product', 'fruit juice', 'isotonic beverage' and low preference and high intake frequency were 'carbonate drink'. The intake frequency of 'pizza', 'sandwich', 'udong', and 'dukbokki' had a positive relationship with sociality. 'Hamburger', 'chicken', 'french fry', 'gimbab', 'mandu', and 'ramyon' showed a positive relationship with anger-out. The intake frequency of 'carbonated drink' had a negative relationship with anger-control, but 'green tea' showed a positive relation with it. 'Carbonate drink', 'isotonic beverage', 'coffee', and 'milkshake' had a negative relationship with anger-out. The explanation power (R2) of intake of fast food and beverage on sociality was 0.019~0.038, and 'carbonated drink' and 'coffee' had a negative influence on sociality. The explanation power (R2) of intake of fast food and beverage on anger expression was 0.011~0.041, and 'carbonated drink' had a negative influence on angercontrol. 'Hamburger', 'carbonated drink', and 'coffee' showed a positive influence on anger-out. From these results, it was necessary to develop the practical eating-out habits program on proper fast food and beverage choice for adolescents.

ABSTRACT

In this study, the soy food intake behaviors including perception and intake frequency of soybean foods by sociodemographic variables were analyzed in housewives. The perception of housewives for soy foods showed that soybean paste, soybean curd, and Dambuk were high in the descending order for nutritional quality and health promotion effect, and soybean paste received the highest score in taste and flavor. Soybean sprouts received the highest evaluation score in the economic aspect. In the aspect of safe food, soybean paste received the highest evaluation score, as mush as a traditional food. The analysis of perception by sociodemographic variables showed that soybean curd, Dambuk, and soybean sprouts had higher perceptions as education level increased, and soy milk had higher perceptions in subjects with younger age and with employment. In the intake frequency, more than 50% of the subjects had soybean curd, soybean sprouts, and soybean paste more than once a week. The analysis for correlation between the intake frequency of soy foods and the degree of perception showed that taste and flavor had high correlation with the intake frequency of soy foods except soybean sprouts. The intake frequency of soybean paste, Dambuk, and soy milk had positive correlations to familiarity and that of soy milk had positive correlations to nutrition and health perception, and those of soybeam paste, soybean sprouts, and soy milk had positive correlations to safe food perception. From the above results, housewives in Korea had very high perceptions to nutritional quality and health promotion effect of soy foods and the degree of perception and accompanied intake frequency had significant differences by age, education level, and economic level among sociodemographic variables.

ABSTRACT

In order to study milk preference and intake pattern of adolescents, the questionnaire survey was conducted with 929 middle and high school students residing in Chungnam cities through October and November 2004. Of the subjects, 56.3% liked milk or liked very much. They preferred chocolate and fruit-tasted milk to plain milk. Reasons for liking milk were for health and its taste, while the reasons of disliking were unpleasant smell and stomach upset. However those who disliked milk did like milk products such as ice-cream, yogurt or cheese. Of the students 35.1% drank milk 2 times or more a day, while 11.8% drank milk less than 2-3 times a month. As a whole they drank milk 8.6+/-6.7 times a week, of which 4.3+/-3.1 times for plain milk. Daily intake amount was estimated as 308+/-315mL. Middle-school students and boys drank more milk than high-school students and girls, respectively. Among the students 64.3% used to drink 1 cup of milk at a time, and 58.3% drank only milk without other foods. It was shown that 51.8% took milk school-serviced and their milk intake frequencies were higher than those of who were not given school milk service. Also milk intake frequencies was higher in students whose mother were housewives than in students whose mother had jobs. Milk preference, intake frequency, and one portion size showed significant and positive correlations each other. In conclusion, milk intake level of the subjects was insufficient and unpleasant smell and stomach upset were the main reasons which decreased milk preference and consumption. Students with low milk preference should be guided with how to drink milk deliciously, how to choose milk type and its products. It is also effective to go into school milk service and to provide milk at home anytime. As students like much fruit-tasted and chocolate milk, the milk processing industries should take their nutritional and health benefits into considerations importantly.

ABSTRACT

In order to investigate the ecological factors affecting milk intake frequency of adolescents, the questionnaire survey was conducted with 929 middle and high school students living in Chungnam urban area through October and November 2004. The subjects consumed milk 8.6+/-6.7 times per week, other beverages 4.4+/-4.1 times per week and drinking water 3.7+/-2.1 cups per day. Of the students 77.3% took balanced meals, 72.8% ate regularly and 36.2% ate adequate amount. About 61% had breakfast everyday and nearly a half students snacked once a day. Nutritional knowledge scores about milk was 7.2+/-1.7 and milk attitude scores was 28.1+/-6.5. The subjects spent daily 1.8+/-1.1, 1.9+/-1.1, and 1.0+/-0.5 hours for computer use, TV watching and exercise, respectively. Milk intake frequencies were positively correlated with excercise, snack frequency, meal balance and regularity, breakfast frequency, food attitude score and milk preference, while showed negative correlationships with TV watching and computer use. Intake frequency of fruit-tasted and chocolate milk showed inverse correlation with nutritional knowledge. Subjects without either school store or vending machine took milk more frequently than those with one or both did. Of the correlated variables, milk preference was the most important influencing factor to milk intake frequency according to the stepwise linear regression analysis, which presented other 5 important influencing factors as food attitude, school vending facilities, excercise, snacking frequency and watching TV. In conclusion, the improvement of milk preference is the most important and effective way to promote milk consumption in adolescents. The favorite ways of drinking milk, nutritional benefit of milk, healthy beverage and good snacking should be taught in nutrition education. Also physical activities should be recommended to students rather than watching TV, computer use and vending facilities selling soft drinks should be limited to be established inside school.

ABSTRACT

PURPOSE:To investigate the impact of dietary pattern on the risk of asthma development, we undertook a nation-wide study with ISSAC written questionnaire. METHODS:We analyzed the relations between the previous 12-month dietary patterns (16 food groups) and asthma symptom prevalence, using the ISSAC written questionnaire and a domestically developed dietary questionnaire in 24,260 elementary school children. RESULTS:Odds ratios (OR) were significantly decreased by increased food intake of natural seafood (OR:0.88, P=0.0126, 95% CI:0.795-0.973), fruit (OR:0.785, P<0.0001, 95% CI:0.715-0.861), vegetables (OR:0.825, P<0.0001, 95% CI:0.764-0.891), and cow's milk (OR:0.9, P=0.0451, 95% CI:0.811-0.998). Compared to children that seldom consumed natural seafood, ORs of symptom development were lower in children that ate natural seafood 1-2 times per week (OR:0.863, P=0.028, 95% CI:0.761-0.978) and almost everyday (OR:0.802, P=0.0755, 95% CI:0.630-1.023), respectively. For green vegetables, ORs were significantly lower than in children who also ate gree vegetables 1-2 times per week (OR:0.753, P=0.0416, 95% CI:0.595-0.950) and almost everyday (OR:0.674, P=0.0179, 95% CI:0.408-0.752), respectively. Fruits showed the same pattern as green vegetables. CONCLUSION:Taken together, our study shows that the increased intake of natural seafood, fruit, and vegetables is significantly related to reduced asthma symptom prevalence in Korean children.

ABSTRACT

The informations concerning knowledge, value and consumption pattern for rice foods of elementary schoolchildren (630 boys and 550 girls in 5th or 6th grade) were investigated in Changwon and Gimhae of Gyeongnam province. They were asked based on knowledge, one's value and intake frequence of rice foods by questionnaries. Menus for 3 days including 2 weekdays and 1 weekend day were taken from 136 students (77 boys and 59 girls) in two Elementary Schools in Changwon and Gimhae to know intake reality of rice product. The purpose of this survey was to find the way of encouraging rice intake and preference which now seemed to be low because of simplified, westernized eating habits, and to provide basic information needed for inheriting and improving our traditional cooked rice centered eating culture. The results are summarized as follows. The knowledge of rice was positively correlated to the one's value (r=0.365, p<0.001) and the preference (r=0.132, p<0.001), the one's value was positively correlated to preference (r=0.409, p<0.001). The score of knowledge for rice was 12.8 points out of 20, the girls get points(13.12) significantly higher than the boys (12.53) (p<0.01). One's value about rice foods was 37.35 points out of 50 what is relatively high. They have eaten cooked rice type food for 2.24 times per day. Both boys and girls in Changwon and Gimhae area were having cooked rice type food significantly more during weekdays compared to weekends (p7lt;0.001) by 3 days food record. According the results, we can see the possibility that schoolchildren can be encouraged to eat more rice foods by nutritional education to go with the development of various programs.

ABSTRACT

The purpose of this study was to examine the effect of nutrition education about the Korean food guide to middle school students on food intake measured by food frequency. Three hundred first graders were sampled from two coeducational middle schools located in the small city of Chungnam area, and divided into 167 (74 boys, 93 girls) education groups of one school and 133 (70 boys, 63 girls) non education groups of the other school. Nutrition education was given to the education group for a total of 16 hours and no education to the non education group during the same period. After education, average nutrition knowledge scores of education group increased from 6.40 +/- 2.17 to 6.81 +/- 1.56 significantly, especially boys with a high range of increase and girls no increase. Dietary habit scores improved significantly from 46.2 +/- 6.5 to 49.1 +/- 6.2 in both boys and girls of education group. Of the knowledge and dietary habits, ability of choosing a balanced meal, biased eating to some food, and taking diverse foods at every meal improved significantly in education group. In non education group no significant increases of either nutrition knowledge scores and dietary habit scores were shown. In addition education group showed significant increases after education, in the intake frequencies of rice noodle loaf bread, kimchi, green and yellow vegetables, and soybean soybean curds by 0.27, 0.23, 0.40 and 0.32 servings per day, compared with non education group. These changes were greater in girls than in boys. According to these results, it can be concluded that nutrition education about the Korean food guide improved effectively not only student's nutrition knowledge and dietary habits, but also healthy food intake ability. It is necessary to prepare long-term and continuous school-based nutrition education programs for the students to get into a habit of healthy food intake.

ABSTRACT

The purpose of this study was to investigate the association among food intake frequency, nutrient intake, anthropometric measurements, and serum lipids in 100 women and 85 men aged 40-74yrs residing in Jeonju City. Food intake frequency and nutrient intake were obtained from one-day dietary recalls. The results were as follows : The mean height, body weight and BMI were 161 cm, 62.5 kg, and 24 kg/m2 respectively. The mean of SBP and DBP were 118 mmHg, 77 mmHg respectively. The mean of TC and TG were 185.5 mg/dl, 153 mg/dl respectively. The mean daily energy and carbohydrate intake was 85. 7%, 91% of RDA for Koreans respectively and that protein intake was 118.5% of RDA. The TC levels of subjects less than 75%, 75-125%, more than 125% of RDA energy were 176 mg/dl, 192 mg/dl, 185 mg/dl respectively(p<0.01). The TC levels less than 75%, 75-125%, more than 125% of RDA protein were 180 mg/dl, 190 mg/dl, 175 mg/dl respectively(p<0.05). TC levels less than 75%, 75-125%, more than 125% of RDA fat were 181 mg/dl, 193 mg/dl, 194 mg/dl respectively(p<0.05). Of the subjects, 18% ate mushrooms. The BMI of the mushroom eaten was 24 and that of non-mushroom eaten was 25(p<0.05). Of the subjects, 28% consumed milk and milk produce. The mean level of TC and TG in milk and milk products eaters were 181 mg/dl, 131 mg/dl and that of non milk and milk products eaters were 197 mg/dl, 159 mg/dl(p<0.001, p<0.05). Of the subjects, 58% ate fish. The HDL-C of the fish eaten was 50 mg/dl and that of non-fishes eaten was 45 mg/dl(p<0.05).
